hi guys , i isntalled ubuntu server , then added ubuntu and kubuntu . I liked kubuntu better and i would like to know how i can remove every single program and gnome of ubuntu.

The answer depends on how you added ubuntu to the server installation. Did you install the Ubuntu-Desktop package? If so, you should be able to use Synaptic to mark it for "complete removal", however I've never tried this, so I can't guarantee that it won't trash your system. However, I believe that Ubuntu-desktop was the package that I installed when I added Ubuntu to my Kubuntu system and that my Kubuntu only (Dapper) system has Ubuntu-base, Ubuntu-docs, ubuntu-keyring, Ubuntu-minimal, and Ubuntu-standard, but not Ubuntu-desktop. So all you have to do is guarantee that those packages (and their required libraries) are not removed.
If you converted from the server edition to the desktop in some fashion that did not involve installing Ubuntu-desktop, you'll have to reverse your selection process.
