I want to optimize transcode from the sources using apt-build as in this link :

All is ok , I can compile and run with success, but after a few I see a new update is available, and with my surprise is a new release of transcode, the one from official repository, not optimized for my machine.
Question is this one: after I compiled from sources of official repository my own version of a package, how can I say "apt-get update" that I want to keep my own version of transcode.
I saw somewhere that I can write inside a file some commands, but no example to follow.
It is safe to compile using apt-build way ?
And how keep update my linux box if I have a package blocked ?
