Hello. I was just wondering what would happen if I switched to the debian apt repositories instead of the ubuntu ones. The only reason I want to do this is so that I can get more software.

You'd get a broken system. It's not a good idea to mix repositories from different distros. While Ubuntu is Debian-based, it doesn't mean that packages from the Debian repositories will work without problems in Ubuntu.
Anyway, most of the apps in Debian are also available in Ubuntu. Of course there might be some things missing. You can check http://packages.ubuntu.com to see what's available. Also check if you have the proper repositories enabled (specifically universe and multiverse) so that you could get the full list of available packages.
