I hope this is simple. I have used the Kubunu machine to access files on my Windows machine - it works out of the box! - but I want to be able to do this the other way round and use files on the Kubuntu machine, how do I configure that, please?

Install and configure Samba. There are dozen's of how-to's here and on the web.

The trouble people run into is usually in the server config file, so if you have problems, start there. Also, Windows7 blocks samba by default but again - there are plenty of web pages on fix that.
