    Hi and welcome to KFN.

Right click on the desktop and go to desktop settings, under the mouse icon you can set up which ever mouse gesture you want. A tip is to also look at system settings > desktop behaviour > screen edges and you can add different actions when touching the corners.

I'm quite sure that I have this setup with ctrl+mouse up/down on my other computer (I'm on Quantal atm not sure it's a bug) can't do it now. Have a look at icons in Application appearance. For the panel increase/decrease the size of the panel usually change icon size. Have a look at the variety of docks, icons-only-task-manager, fancy tasks and smooth tasks. These may give you some more options.

I think most of us still trying to figure that out. I have several but don't use them all that much. Think of activities as desktop but less attached to each other - more like different computers. I would say that's a scent of KDE philosophy, give the tools to the user - and let the user figure out if they want it or not. Quite different approach then Canonical/Ubuntu.
Coming workflow plasma is really neat and making activities much easier to configure and handle. Link below with demo videos.

Have a look at system activites ctrl-esc and see what's causing the performance issue. Reducing the number of plasmas running may be one way to go. For me on my systems fancy tasks mentioned above have always made my system run slow or choppy. Have a look at different Kwin/window decorations and desktop themes and see if they may be the cause.

System settings > application appearance > fonts > adjust all
. Also try different solutions there for the choppy/edgy bit.
