Depending on the capability of your rig, you might look at Roesgarden and JACK (JACK Audio Connection Kit) ...a professional sound server daemon that provides real-time, low latency connections for both audio and MIDI data between applications that implement its API. (of which, Rosegarden is one)

+1 for Rosegarden. It took a little bit of configuration to get it and JACK working seamlessly on my machine but everything is well documented on the web.

Remember, not everything is plug-n-play like in windows. Setting up a studio in linux takes a little bit of patience and understanding of how the interfaces work.

If you are used to Cubase, the only app that I have found that is even close is Ardour (www.ardour.org). It will support VST (yes, windows VST's), multiple inputs via JACK, etc. It really is good software. there is no MIDI in the 2.x version, but V3.0 is due out soon, and is supposed to have MIDI support.
