Been trying to use Partimage but just realized part of my problem is the backup partition I created to store the Kubuntu image is an extended partition. How would I convert this into a logical one? Thanks.

If you use a graphical partition editor like gparted (recommended) or qtparted, you can create a logical partition by selecting the 'unallocated' space inside the extended partition and clicking 'New' (in gparted) and choose the size/filesystem etc. in the dialog (partition type 'logical' should be preselected in the dialog)
EDIT: don't forget to 'apply changes' once you've set everything up as you like.
