How do I conveniently chose the application to be used for processing various files, eg, mpeg, jpeg, pdf, etc, etc, allowing me to possibly associate programs I have downloaded

Right-click on the file then choose Properties.
Click on the little spanner/screwdriver icon. This should bring up another window.
Look down in Application Order Preference and use up/down to change them
First one if the default program used.
