Why is it that it says I don't have permission to edit a *.desktop item with the nice gui so I have to go to Edit as Root and edit it in Kwrite to make changes? How can I just use the gui?

Possibly you were working as the Super User (root) when you created it? -

because there is only "edit as root" default action
