There is a pattern of releasing a xx.04 version and then a xx.10 version shortly afterwards, why is this? And, is the xx.10 version coming out soon just an update of xx.04 and it will still be LTS? I want to keep the LTS status.

Ubuntu (and its recognized flavors) follow a six-month release cycle. The format of the release numbers is:
* "xx" = two-digit year of release
* "04" = release in April
* "10" = release in October
12.04 is, in fact, an LTS; support is for five years.

No. Typically, a new LTS is released every two years.
