I've done some tweaking on Systems Settings, but I can't seem to affect the text within Terminal. For me, it is an ultra thin san serif font that loses definition on my screens.

Easy!
Just start a terminal, choose "Settings", "Edit Current Profile", choose "Appearance" tab and down the bottom you can adjust the font face/size as you wish.
Just to add, if you move the settings dialog off the terminal itself and then mouse over the "Color Scheme and Background" choices you can see the changes in the terminal itself.
