I believe VLC (a media player, that you might know from Windows) will do pretty simple conversions of video files... but then to actually author a dvd to put into a standalone player, you could try QDVDAuthor (I never did get it to work)...
Is your camcorder video hi-def? Because then things get a little tricky...
There is a linux version of Nero (not free), and I'm not sure if it does authoring, but you might want to look into that... -

To convert video files, such as an avi file from your camcorder, use DeVeDe. You will find it in your package manager. Easy to use and it will give you many menu options to use.
