I don't have any Polish background (that I know of,) but the Kielbasa in Wikipedia's picture looks pretty good. Sorry, I don't have any recipes.
EDIT: I just remembered that I picked up a couple packages of knackwurst today, which are similar.

PS. Idon't know much Polish myself, I just used Wiktionary, which is pretty good for some translation IMO.
