What would the advantage be to replace a 2GHz processor with a 2GHz dual core processor, running 32bit software?

That's my assumtion. The software must be mutlithreaded. So, is the kernel able to thread on each processor and how much advantage would running 32bit on a dual core give. In other words, would it be worth the money to upgrade simply to a dual core processor. If your Linux kernel is "smp" (which these *buntu kernels are) then the kernel will automatically schedule both CPU cores in an optimal manner. It's also possible to run two instances of single-threaded applications, and one instance will run on each CPU core.
Gnome Wave Cleaner (gwc) is a package that I have used in that way, on my Core 2 Extreme -- it runs both cores up to 100% while it is running the process on an audio file.

I installed kubuntu on my girlfriend's quad core and all I can say is 'WOW'
Used k9copy on a dvd and all 4 cores being used, but it was still very responsive. Shrank it in about 10 minutes. Running an apt-get update/upgrade, processing time was minimal. Being used to my own somewhat pedestrian PC I suggested a coffee while it updated, but what would have taken mine several minutes was over in seconds. I want one.
