The little icon at the bottom no longer notifies me of when there are updates unless I open it manually. I must have somehow switched it off, how can I turn it on so it notifies me of updates?

Perhaps in Discover's settings (alternatively Konsole -> sudo software-properties-kde)?
PS: in Kubuntu 23.04 / Plasma 5.27.x one could also change this in -> System Settings -> System Administration -> Software UpdateDebian KDE & LXQt • Kubuntu & Lubuntu • openSUSE KDE • Windows • macOS X

get rid of Snap script (20.04 +) • reinstall Snap for release-upgrade script (20.04 +)
install traditional Firefox script (22.04 +) • install traditional Thunderbird script (24.04) -
