An update for anyone coming through later on experiencing the same issues. Ever since I stopped using activities and moving to virtual desktops the issue has completely disappeared. I have not had it happen at all. My system is completely stable now and works smoothly. I guess the issue must've been with the Intel Iris Xe GPU conflicting with something in Plasma. Should I report this? If so, what is the appropriate channel to submit this?
