I have an AMD 6900XT plugged into a Gigabyte Aorus48 monitor using display port and can only get 120fps when I log into plasma on wayland in kde. When I log in with xorg it only offers up to 60fps. Clearly the hardware is capable and there is nothing wrong with my cable since it works on one but not the other. Note this is not an issue with hdmi2.1 as I'm using the display port. I've upgraded to the latest vanilla 6.2 kernel to get the best driver support for the card but it has not changed anything. I want to like using wayland but the font rendering on plasma is all screwy and the wrong size. xrandr -q on xorg does not report 120fps support at 4k, though wayland has no problem setting it. Any suggestions appreciated, thanks.

There is a post in the LinuxMint forum about a similar problem: https://forums.linuxmint.com/viewtopic.php?t=337284
Perhaps this can help with your GPU/monitor refresh rate (on x11).
Otherwise for other people to see the output of xrandr or xrandr --verbose could be interesting (just two examples - more information increases the chance that somebody actually can help you).
PS: For Wayland I would suggest to give Kubuntu 22.10 a try as meanwhile it has Plasma 5.27.1 in the backports

Plasma only can set what the system is reporting
fwiw my less lofty RX 6600 (sore missed) had no issue with 144hz on my two 1080p monitors, or even the 'overclocked' 165hz.
Nor does my current ancient and measly rx560 I am using until I am no longer so poor.
I have been Wayland only since August 2021 or so, but my Hz are the same in Xorg last I checked.

FPS is not set by xorg, it depends on the hardware capability. I think you're actually wanting to set the refresh rate of xorg higher to provide a better FPS from the video card and monitor. FPS is not the same as refresh rate, but they work hand-in-hand. Refresh has to be set and FPS rate supported to get the output you want.
When you say "xorg does not report 120fps (hz actually) support at 4k" can to explain where you go that information? What report? If you're just typing "xrandr" and looking at the output, that's not a final list of what's supported. It only shows what modes are currently available.
How you handle this will depend on your needs and comfort level. You can set the resolution manually with a log in script or you can create configuration that xorg can read at boot - like using xorg.conf but now it's typically done slightly differently.
The first thing to do is establish the mode you want works. the "cvt" tool will create a modeline for you. Here's the output for 3840x2160 @120hz

Using the cvt output example above, the commands are:

Assuming this works and you're satisfied, you will need to decide how you want to enable it permanently.

My previous set up I used a login script to set my external monitor for my laptop, but that monitor died so I don't need it anymore.
Some other things you will need to look into:- Not all applications support 4K (I've only run into a couple).
- The display manager, SDDM, does not use Xorg so you'll have to configure it separately.
- Depending on your monitor size and your vision, the desktop text may be too small for you. Increasing font sizes and/or setting zoom to 150% might be needed.
- Kscreen2 is, IME, notoriously poor at picking screen resolutions. You may need to remove it and manually set the display.

So far I tried copying the wayland mode verbatim to xorg with the following and added the mode to DP-0, and whilst the 120Hz option appears in display settings, the monitor complains of being out of range.

Alas updating mesa didn't help either. It still says out of range when I set the mode which is bizarre since it's the same mode as wayland uses.
