I keep having to set the properties for the folder view desktop widget back to "show desktop folder" every time I log back into kde. It defaults back to my home folder.
Ideas on where to fix this?

No, but I'm getting a similar issue with the placement of icons on a secondary panel. Gimp and Konsole always switch place. It's a plasma issue, but the only thing I can think of is deleted the config file and the reconfiguring the desktop. Annoying, but it might work.Weaseling out of things is important to learn. It's what separates us from the animals ... except the weasel.
