The file /boot/grub/menu.lst, which I used to edit to control grub's behavior, isn't there any more! It's apparently been replaced bygrub.cfg, which is marked "do not edit"! So how do I go about modifying the setup information for grub?

Welcome to the wonderful world of Grub2. Take a look at Qqmikes Grub howto, as I believe that he has information on using/managing Grub2.Windows no longer obstructs my view.
