I'm thinking of getting a new video card. Do I need to uninstall the drivers for the old card?

the simple answer is: no!
i'd go about this as follows:
- physically install your new card into your box
- install drivers for your new card
your new card will be found at a different hardware path, so:
- instruct the graphics server to use the new card at the new hw path
- make sure the new card work alright
the "lspci" command will tell you the path of the devices on the bus.
