How to avoid upgrading specific application(s)?

I'm using an older version of Audacity (1.3.3) because one of the most useful features (for me anyway), change tempo - where you can change the speed of a sound without changing its pitch - seems to have disappeared in newer versions (1.4.x).
How do I mark just this one application to be ignored when upgrading in Adept or Synaptic?
Dont pretend you havent noticed my cardboard box, Julia, because I know you have!

You can lock/pin version > Pinning version

Synaptic also has lock version BUT those locks are only used by the Synaptic.
Synaptic > Package > Lock Version
    Before you edit, BACKUP !
