What is the difference between Ubuntu Ultimate v1.8 (64 bit) and Kubuntu v8.04 (64 bit) ?

Ultimate Edition is currently only based on Ubuntu, and not a supported branch and no longer sports "Ubuntu" in the name.
Differences:
Ultimate uses Gnome
Kubuntu uses KDE
