MySQL should I set up a server?

I'd like to learn MySQL and practice using it.

Should I set up a desktop with second NIC as a Ubuntu home server network
or is there a simpler way ?

You can just install the package mysql-server on your main machine, and play away; no need for a separate machine unless you really want to!

Thanks for that it's installed. Which admin should I use as a mysql newbie?

      Kmysqladmin
      Mysql administrator
      Mysql Query browser

      or something else?

The only GUI tool I've used is PHPMyAdmin (as I already had a working Apache/PHP environment set up); if you're not doing web development then my advice is to try out those packages you've mentioned, and see which you like the best.

If you're in a particularly hardcore mood, you could try and do everything from the commandline... ;-)

OK thanks for that, I'll try the GUI rather than command line.
