i enabled them all and got tons of cool updates but some of the main ones were unstable and it killed some of my config files......

I mean just the one that come with Kubuntu not extra ones you put in yourself.

Personally, I've never had too much trouble with extra repositories. I've even added repositories completely apart from the "regular" Kubuntu ones, and still had no problems. I don't think you should encounter any big issues, but it's more possible than if you didn't enable those repos. Of course, you do get a lot of the nicer things on those repos, after all, so I think it's generally worth the risk. Anyway, it's not like you have to leave them on. You can turn them on, download the packages you want, and disable them until you need them again. Good if you like to play it safe.
