switching to kde

I'm currently running Ubuntu and would like to switch to Kubuntu. If I don't like kde, then will all my files stil be there If I switch back to GNOME?

Absolutely. I suggest you follow this guide in installing KDE over Ubuntu:

one question: do aplications from gnome (like gimp and games) still remain in KDE?

Yes...they will still be usable...downside is that all the gnome apps may clutter your kmenu a bit, but they will be available.
