I decided to install Kubuntu 12.04 as my only OS. Everything is working fine and I am working on getting Steam and skyrim going.

My problem is everytime I reboot, my dual monitors go back to mirror instaed of to the left of. I have saved as default in settings -> monitor and nothing changed. I have an Nvidea 9800 GT 1 GB card and I am using the post release driver from additional drivers. Any thoughts?

Let me know if you have issues. I have been running dual monitors with nvidia for years.

If you want system wide settings effecting all users, I think the easiest way is through xorg.conf. Then the settings take effect every time X is started. If you want each user to have unique settings, nvidia-settings will create a file in your home with your personal settings in it.

I use both - xorg.conf to set the major options and dual monitor settings and ~/.nvsettingsrc to enable overclocking of my GPUs when I log in, but not for the other users.

nvidia-settings can write the xorg.conf file for you so you don't even need to understand how it works.
