I have the same question as you dusktreader. I have two output devices, headphones and HDMI connected speakers. I frequently find the need to switch between the two but the tasks takes too many clicks to accomplish. And as you have stated, it is not trivial for a novice. It's unfortunate that you haven't found a solution still so hey *bump* it's worth a try
I should note that I am running Kubuntu 11.10! So a year and no improvement
