not sure about your setup, but here is mine. Note that it's not technically syncing the iphone with Kontact, but it gets you the same thing.
First, setup your iPhone
Using iTunes, sync all contacts to gmail.
Then turn off your contacts on your iPhone and set them up to sync with gmail. You should now have all the same contacts, but making a change in either gmail or on the iphone changes them both.
Setup your calandar to sync with your google cal account as well. Use that as your default.
Second, setup Kontact
Setup Kontact with the same email accounts. For example, I have Yahoo, Gmail and my own IMAP server.
Setup Kontact with Gmail Cal and Gmail Address book.
Again, sorry about tasks....
That should set you up so that no matter where you're at you can access all of your information. A change to anyone of your calandars, addresses or any sent/received emails should propagate to all three sources; gmail, kontact, iphone.
I've used this setup in both Kontact and Thunderbird and I found TB to work better.
If you have a jail-broken iPhone and you're just looking to backup it up, you could setup an ssh script to login from your PC and grab the address, sms, notes, and calendar .db files in /private/var/mobile/Library/ from your iPhone.
